To help keep your knives as sharp as possible while you are cutting, it is recommended that you only cut on bamboo, hardwood, or NSF-certified polymer cutting surface. Cutting on glass or marble will dull your knife blade considerably faster. It is also important that you do no try to cut through bone, as this will dull your knife as well. When you have finished cutting with your knife, wash it immediately in warm soapy water and dry thoroughly. Do not let your knife soak in the water. Never use any bleach based or citrus extract on your knives. These cleaners are too harsh for your knives. As mentioned before it is important to keep your knives sharp. This will greatly reduce your chance of having a accident in the kitchen. The recommended methods of sharpening are with a honing steel, handheld sharpener, ceramic honing wheel, whetstone, or sending it to the manufacturer for a factory edge. When storing your knives, it is crucial that you keep the blades same and from hitting each other. This can be done by storing them in a knife block, on a knife magnet, with blade guards, or in a sheath.
