The alternating kullenschliffs (a.k.a. kullens, hollows or grantons) on each side of the knife reduce drag and prevent items from sticking to the blade, because fats and juices fill the groves while chopping. This type of edge is preferred when thinly slicing foods.
The broad blade of the knife is made out of a single billet of fine high carbon German steel alloy. Using a single billet creates a better-balanced knife. The cutting edge is tapered to 15°.
Properly caring for your Messermeister knife is very important, and will give more life to your blades. Maintaining a sharp edge on your blade and keeping food from drying to it can help prevent injury while using your knife. After you are finished with your knives, clean them with warm soapy water, fully dry and safely store them in a blade guard, knife block, or an in-drawer storage tray. Do not wash your knives in the dishwasher or let them soak in water.
