A piece of specially tempered high carbon steel flows throughout the knife for better balance. Encasing the handle are two black synthetic shells that are triple riveted to the tang for strength. The seamless fit of the shells and material used make these knives more hygienic to use. The National Sanitation Foundation (NSF) has certified these knives for meeting strict public standards.
