The Wüsthof Gourmet Mini Chai Dao, Hollow Edge, 5" Knife has a thinner blade than a chef’s knife. The traditional styled Chinese Chai Dao has a rounded edge that lets the home or professional cook make quick work of chopping food on a cutting board. It is easy to maneuver, and is perfect for chopping, slicing, dicing and mincing. This knife can perform all the functions of a small Santoku and chef's knife.
The hollow-edge knife on this mini Chai Dao has evenly spaced vertical indentations that create small air pockets between the blade and the food and reduce friction and drag. Starchy foods, like potatoes, easily slide off the blade.
To ensure your knives last for a long time, they should not be put in the dishwasher. Clean your knives right after use, washing in warm water with a damp cloth and dishwashing soap. Dry the knives after washing.
