The high-carbon stain resistant steel blade is measured at 56° Rockwell hardness. This allows for excellent edge retention so you are able to cut longer without having to sharpen the knife as often.
An ergonomic handle was designed with a unique two-stage construction. Working with meat can be one of the most unhygienic tasks in the kitchen if the utensils are not cleaned properly. The Wüsthof Pro 10” uses an outer shell made of a slip-resistant material for the handle that can easily be washed. All Pro series knives have been NSF (National Sanitation Foundation)-tested and certified.
