Hollow Edge Knives

A hollow edge blade has a series of evenly spaced indentions on a knife blade close to the cutting edge. The indentions provide several advantages to the hollow edge blade including reduction of friction on the blade as well as preventing particles from sticking to the edge of the knife which can disrupt clean, even cuts. This blade style is very strong which makes it suitable for a wide range of kitchen uses but hollow edge knives tend to be thinner and lighter than expected. Santoku knives are one type of hollow edge knife and varieties of Chef’s knives are also available in a hollow edge variety.
