The Shun Ken Onion 3” Paring Knife has strong core of VG10 steel, supported by sixteen layers of Damascus cladding on each side, for an impressive total of thirty-two layers of SUS410/SUS431 stainless steel. The Kasumi method of knife-making produces a blade that glides and slices smoothly through foods, and also leaves a lovely undulating visual effect along the blade known as suminigashi, which means “ink pattern” in Japanese. This razor-sharp blade displays notable edge retention, while its full tang presents exquisite balance and strength. 

The Shun Ken Onion line of knives incorporates many design innovations to reduce strain while allowing for complete control during use. The bolster angles to extend along the back of the spine, and the handle curves to complement the arc of your palm. Merging striking beauty and unmatched ergonomics, these enhancements work to help cultivate a professional pinch grip while cutting, whether used left-handed or right. 

The ebony handle of the Shun Ken Onion 3” Paring Knife is made from PakkaWood, Shun’s innovative resin-treated hardwood, and sanded and buffed to a smooth, shiny surface for unerring durability and moisture resistance. Shun fine cutlery should be hand-washed for best edge retention.
