While shaped very similar to a Western meat clever, this wide, squared blade is actually designed for larger vegetables and not suitable for chopping through bones. The flat of the blade comes in handy when crushing garlic or scooping chopped foods for transport from the cutting board to their next destination in pans, pots or plates.
The blade’s strong core is reinforced with sixteen layers of Damascus cladding on each side, created utilizing the Kasumi method of making blades. This procedure produces a superbly strong and sharp edge, and allows the blade to more easily glide through foods during use. It also results in an eye-catching rippled pattern upon the blade, known as “suminigashi” or “ink pattern.” The blade presents a razor-sharp edge and features a full tang, delivering optimum strength and balance in addition to exceptional performance and edge retention.
The innovative D-shape of the handle fits securely in your palm, and is constructed using resin-treated hardwood that makes up the ebony-black PakkaWood. Sanded and buffed into a glossy finish, the refined, contemporary handle provides superior durability and resists moisture.
