The Shun Classic cutlery is crafted using traditional Japanese knife-making techniques, beginning with an exceptionally hard core of VG10 steel. The Shun Classic 6.5” Nakiri represents a traditional Japanese vegetable knife with its clean and swift handling for straight-down chopping vegetables of all kinds with its level blade, edge and spine. This fine blade proves indispensable for slicing, dicing and chopping large quantities of fruits and vegetables, for salads, stir-fry and more.
Skillfully made using the Japanese Kasumi method of making blades, the Shun Classic 6.5” Nakiri offers a strong core supported by thirty-two layers of Damascus cladding, with sixteen layers on each side. This process results in a blade that slices and glides more easily through foods, and creates a lovely rippled pattern upon the blade known as suminigashi or “ink pattern.” This razor-sharp edge offers exceptional performance and edge retention, while the full tang displays marvelous strength and balance.
Shun’s PakkaWood is made using resin-treated hardwood and formed into the D-shaped handle that fits securely and naturally in your palm. Sanded and buffed to a glossy finish, the ebony-black handle of the Shun Classic 6.5” Nakiri presents a refined, contemporary aesthetic, offering superb durability and moisture resistance. Hand-washing fine cutlery generally results in better edge retention.
