The Two Stage Hand Held Asian Knife Sharpener from Wüsthof makes it easy to maintain the exceptionally sharp edges on your Wüsthof Asian-style knives. Designed for use with blades of Asian design such as Santoku and Nakiri, this versatile sharpener is weighted and includes a rubberized base and comfortable soft-grip handle, for secure ground while sharpening. The narrow blade angle of you Santoku and Nakiri knives will be sharp as new with just a few strokes.
The sharpener provides two slots, one each for coarse and fine sharpening. The coarse sharpening stage utilizes crossed, hard carbide steel blades, while the fine, honing stage is performed with fine ceramic rods. These two stages sharpen the edge to a 20˚ angle, or 10˚ per side. A relatively sharp knife may only require a few strokes pulled through the fine stage, while a blade that has lost its edge will need to be restored through the coarse stage first. After each use, clean the sharpener with a damp cloth and wipe try. Do not rinse the sharpener with water.
The Wüsthof Two Stage Hand Held Asian Knife Sharpener carries a lifetime guarantee.
