The Kyocera 6-inch Nakiri Knife is specifically designed for making paper-thin cuts. Geared toward use with vegetables, the long square profile of the blade is suited for push cutting and chopping, not rocking. Nikiri knives are very similar to Usuba knives, except they are double beveled instead of single.
Kyocera Nakiri blades are ground thin for performance making ceramic an ideal choice for its strength properties. Ceramic is stronger, and can hold an edge up to 10 times longer than traditional metal blades. They also are chemically inert and contaminate free, so they will not alter the taste of food they are cutting.
Each handcrafted handle is made from Pakka wood. Unlike other wooden handles, Pakka wood is impregnated with phenolic thermosetting resins, making the wood water resistant, and helps discourage the growth of bacteria. Like the ceramic blade, the handle of this knife is a sleek black color.
